Hot Apple Cider Recipe

My favorite time of year is finally here!  It takes a little longer for Fall to arrive here in Central California so I am so excited to take it all in and enjoy everything about this season.  One of my favorite Fall traditions is making Hot Apple Cider.  I find comfort in sitting with friends and family and holding a warm cup of delicious cider.  I also love making it myself.  This recipe is quick and easy and will fill your home with the scents of Fall.  Enjoy!

What you need:
One liter of all natural, no sugar added Apple Juice
2 Cinnamon Sticks
2 whole Cloves
2 tbsp. Brown Sugar
1 Orange sliced thinly

What to do:
Simply add all ingredients to a sauce pan and bring to a boil.  Boil for 1-2 minutes and turn heat to a slow simmer for 20 minutes.  Pour into glasses and garnish with a cinnamon stick or slice of orange and enjoy!

Grilled Asparagus

This recipe is a staple in my home.  It is so easy, I’m sure it will become a favorite in your house too.  I filmed myself cooking this dish, but it’s a little shaky.  So, feel free to watch, or simply read the recipe below.

 

What you need:
Fresh asparagus
Salt and Pepper to taste
Garlic & Herb Seasoning (I use Salt-free Mrs. Dash)
Olive Oil

What to do:
1.  Heat on High a grill pan, or use the BBQ outside.
2.  Place cleaned and cut asparagus on the hot grill.
3.  Sprinkle lightly with salt and pepper.  Allow to cook on grill for 2 minutes.  The asparagus will turn a bright green. 
4.  Drizzle with olive oil.”
5.  Flip asparagus and allow to cook an additional 1-2 minutes.
6.  Sprinkle with garlic and herb seasoning.
7.  Remove from pan and enjoy!

Homemade Apple Chips

I’m always looking for healthy easy snacks and this one is as good as it gets.  These sweet and salty Apple Chips are all natural and so simple! 

This recipe is so easy!  All you need is:
1.  Salt to taste after baking.
2.   Apples.  Any kind will work, but I prefer Gala.
You will also need a cookie sheet lined with parchment paper for baking.


Pre-heat the oven to 200 degrees.  Next, simply wash and thinly slice your apples.  You want them to be as thin as you can get them.  Using a mandolin or food processor might help with this process, but I prefer to simply slice them using a knife…I’m not a fan of appliances :).

 

 

Place apple slices on to a parchment paper cookie sheet.  If you do not have parchment paper, spray your cookie sheet with non-stick spray.  Put cookie sheet into the 200 degree oven for one hour.  Check the apples halfway through and flip them if necessary. 

 

 

After apples are cooked, they will be brownish and dry-looking, remove them from the oven and sprinkle lightly with salt on both sides.  Allow to cool for 30-45 minutes and enjoy!  You can store these in an airtight container or ziplock bag for up to five days, but they are so good I doubt they will last that long in your cupboard.

Grilled Honey Shrimp

I love to cook and create new recipes to share with family and friends.  This Grilled Honey Shrimp recipe is perfect for warm weather.  I have used a grill outside, or in this case, I’m using a grill pan on the stove top…either way, this dish is delish!  The honey adds a nice sweetness to the shrimp and the red chili pepper flakes add just enough heat to keep things interesting.  These shrimp are perfect on a salad or as the main course with fresh fruit and veggies.  It is super easy and super fast, cooking time is less than 5 minutes!  I hope you enjoy.

Grilled Honey Shrimp

What you need:
One pound of raw, cleaned shrimp
Honey
1 tablespoon Red Chili Pepper Flakes
1 tablespoon Olive Oil
Salt and Pepper to taste
Skewers

Get Started!
In a bowl, stir together  Raw Shrimp, 1 tablespoon Red Chili Pepper Flakes, 1 Tablespoon Olive Oil and a pinch of Salt and Pepper.  Simply stir so that all the shrimp are coated with all of the seasonings.  If you like a more mild flavor, eliminate the chili pepper flakes, or only add half the amount :).

 

Next…
Thread the raw shrimp onto skewers.  I use metal skewers because you can wash and reuse them.  If you are using bamboo skewers, be sure to soak them in water for 30 minutes before you use them so they don’t burn on the hot stove and ruin your dinner!  1 pound of shrimp will make about 8-10 skewers.

 

Get Cooking!
Heat a grill pan on high for several minutes before placing skewered shrimp on pan.  Cook for 1 minute.  After 1 minute drizzle honey over each skewer and cook for an additional minute.  The shrimp will begin to change from gray to pink.  Flip shrimp and repeat, cook for 1 minute, drizzle with honey, cook for an additional 1 minute.  And that, my friend, is it!

 

Dig In!
That is all it takes to make this delicious and tasty recipe.  I told you it was quick and easy!  I would pair this with a fresh green salad for a light lunch, or make it the main course by adding veggies, fruit and bread.  No matter how you serve it, you will love it!

How To Make Natural Popcorn

I LOVE popcorn!  It’s salty, and crunchy, and buttery, and lovely.  I could go on and on about it.  I always have microwave popcorn in my cupboards.  But since having gone “organic” and only eating whole foods, I have not touched a bag of the stuff, and I must admit that I miss it.  If you have a box of popcorn hanging around your kitchen, take a moment to read the ingredients label.  It is full of butter, salt, sugar, artificial color and flavor, oil, and preservatives…all of which we should not want in our bodies.  Lucky for you though, I came across an amazing, life changing, tip this week on how to make natural microwave popcorn at home!  Brace yourselves, you are about to be amazed!

All you need are 2 simple things:

A brown paper lunch bag
Popcorn Kernels
You can find these in the popcorn section of the grocery store. 
Any kind will work, or you can purchase Organic Kernels at places like Whole Foods.

So, how do you do it?  Follow these simple steps:

1.  Open lunch bag and put 2 small handfuls of popcorn kernels in.
2.  Make 3 tight folds at the top of the bag.  You should roll the bag down only an inch or so.  The popcorn needs room to expand as it cooks.
3.  Place in microwave for 2 minutes. 
(when are first trying this, stay by the microwave to listen for the popping to stop.  Every microwave is different, but mine takes about 1.5 minutes to cook)
4.  Remove from the microwave, open up the bag and enjoy wonderfully natural popcorn!

Following this recipe will give you a medium bowl full of popcorn.  So, obviously, if you are cooking for a large crowd, are super hungry, or have a double feature movie night, you might need to make more than one batch.  This popcorn is all natural so you can control what you put on it.  You can add butter, salt, pepper, parmesan cheese, whatever you like!  You know exactly what you are eating which is exactly what we want!  Also, since there is no oil on the kernels, you can reuse each brown paper bag up to 5 times…so no wasting paper! 

I am so excited that this actually works.  To be honest I did not believe the article when I read it.  I mean, if we can make microwave popcorn at home, why wouldn’t we?  Isn’t there a reason we buy it at the store?  But this actually works and I’m thrilled!  So, go pop some popcorn and enjoy!  You will be amazed.
